Hi Mimi. Ginjo and Daiginjo are both premium sakes yet they differ by the level of rice that has been milled (polished) away during processing. A daiginjo is the highest quality and uses rice where at least 50% of it has been polished away. This milling makes the daiginjo more complex and aromatic than the ginjo that uses rice that has at least 40% of its outside milled away,
