If you want to pair sake with meat you want to look for a sake with a high acidity level as these sakes tend to have a rich flavor profile. I really enjoy pairing Kurosawa Junmai Sake or Momokawa Diamond Junmai Gingo with my beef. As you can see from the Tippsy info, they both have an acidity level of 1.8 (the acidity number tends to be between 1.0 and 2.) and so these higher acidity sakes will pair well with your beef dishes.
