Curious to know the difference between Dassai 45, 39, 23
Dassai “23”
I had Dassai "45" in my first Sake Box and I really liked it.
I want to explore Dassai series, but not sure which Dassai to go next. What are the difference between Dassai sake series?
Any recommendation?

Hello. Well the difference is the seimaibuai (rice polishing ratio or RPR). The RPR is the percentage of the rice grain remaining after polishing. In the case of the Dassai series the number represents it seimaibuai or RRP. So Dassai 45 has an RPR of 45, 39 has an RPR of 39, and 23 has an RPR of 23. The lower RPR number means more of the rice has been milled away which tends to lead to more of the ginjo/daiginjo characteristics such as the fruity and floral taste and nose.
