The alcohol percentage in this nigori may be on the lower side for most sake, but it is a stylistic choice. Some sake can be as high as 22% or as low as 5%, this is managed by the brewer’s techniques and direction. Alcohol content of the sake can be influenced during the fermentation period depending on a number of factors such as the type of yeast, minerals of the water, conditions, type of fermentation starter, and how much water is added in each step. By managing all these factors, the brewer can alter the final product into how they would like it to be expressed!
