Is it ok to take it in and out of fridge over a period of time or would i need to finish it soon after opening?

It’s almost always going to be best to finish it as soon as possible after opening. That being said, the flavor of sake tends to keep better compared to say wine after opening. Unless a product is labeled as unpasteurized, or nama, you can expect flavor to stay consistent for a week or two in the refrigerator without worry. Even if it goes longer than that, sake will not spoil per se (unless exposed to other foreign bacteria) and will remain drinkable as the flavor starts change.
